Even after growing up with Carzus, they still fear him because of his quiet personality and domineering aura. They also witnessed how Carzus slaughtered anyone who got in his way without hesitation, many times, that's why their fear is justifiable.
Carzus looks down for a moment while processing Ellie's words. He's not actually mad at what he just heard, he even thought that Ellie might help him somehow in changing himself just so Chiara won't fear him anymore.
